Thai Chicken and Broccoli with Peanut Sauce

Ingredients

  • 1/2 Cup Dry White Wine
  • 4 Chicken Breast Halves
  • 4 Cups Broccoli Flowerets
  • 2 TB Oil
  • 3 Cups Coconut Milk
  • 4 TB Honey
  • 1 Ts Salt
  • 6 TB Low Sugar Peanut Butter
  • 3 Ts Curry Powder
  • Cayenne Pepper to taste

Directions

  1. Heat wine in large skillet. Cook chicken in wine uncovered over medium heat for 15 minutes
  2. Add broccoli to skillet and cover. Simmer for about 10 minutes.
  3. Prepare sauce. Heat oil in medium saucepan and whisk in coconut milk. Add honey, salt, and peanut butter and bring to a boil.
  4. Add curry powder and cayenne. Lower heat and mix for 5 minutes.
  5. Serve as is or plate with rice. Enjoy!
