
Thai Chicken and Broccoli with Peanut Sauce
Ingredients
- 1/2 Cup Dry White Wine
- 4 Chicken Breast Halves
- 4 Cups Broccoli Flowerets
- 2 TB Oil
- 3 Cups Coconut Milk
- 4 TB Honey
- 1 Ts Salt
- 6 TB Low Sugar Peanut Butter
- 3 Ts Curry Powder
- Cayenne Pepper to taste
Directions
- Heat wine in large skillet. Cook chicken in wine uncovered over medium heat for 15 minutes
- Add broccoli to skillet and cover. Simmer for about 10 minutes.
- Prepare sauce. Heat oil in medium saucepan and whisk in coconut milk. Add honey, salt, and peanut butter and bring to a boil.
- Add curry powder and cayenne. Lower heat and mix for 5 minutes.
- Serve as is or plate with rice. Enjoy!
