Oh Kale Yes: I learned about this healthy and delicious salad from Daphne Oz while watching The Chew. Its a delish way to add veggies to your meal, and easy to throw together.
I try to have most of the ingredients on hand at all times so all I need to pickup is the kale and lemon. At times, I’ve used bottled lemon juice too when I didn’t have a fresh lemon.

Play With Zoodles: I want oodles of zoodles! Loving zoodles – zucchini noodles made with a Veggie Spiral Slicer. I love mine. It has been collecting dust back in a kitchen cupboard for about a year, until recently, when I was inspired to try it out. I can’t believe how easy it is to use and you can spiral a ton of fruits and veggies.
I’ve made Beef Stroganoff over Zoodles (DELISH) and I topped noodles with frozen turkey bolognese from Trader Joes (Also YUM). So many possibilities!

Get The Veggies & Greens Salad Kit: Dinner time is hectic in my house and there is not always time (or the energy) to make a salad. I’m loving the pre-made salads at Trader Joes like this Veggies & Greens mix.
The complete salad kit includes cauliflower, brussels sprouts, radicchio, kale, dried pear crumbles, pistachios, and honey ginger dressing. The pear, pistachios and dressing is on the side so you can add that to taste. It’s fun to add other ingredients you like as well to make it your own.
